Fred Flynn (above) has been the spirits director and head barman at the acclaimed Wilmington restaurant manna since early 2019.
His creation for late spring is a drink he calls Giorgi’s Poem: “I love the smokiness and acidity of this drink. It’s very playful and keeps your tongue on its toes.”
1.5 ounces Sombra mezcal
.75 ounce Luxardo Cherry liqueur
.75 ounce Yellow Chartreuse
.5 ounce fresh lime juice
Stir all ingredients over rocks, then strain into a coupe or martini glass and serve with a charred lime wheel.
